700gr Venison
300gr Pork Belly
Liquits / Ice
50ml Ice Water
Casing / Skin
1.2m Pork Casing 30-32mm
Herbs & Spices
18gr Rock Salt
3.5gr Course Black Pepper
0.5gr Ground Nutmeg
2gr Ground Coriander
0.5gr Ground Cardamon
0.5gr Ground Juniper Berries
0.5gr Ground Bay Leaf

    Before you start with this recipe you need to do a little preparation.

    To make this sausage you will need the following equipment.

    • Mincer with 5mm plate
    • Large mixing bowl
    • Sausage filler and nozzle

    Preparations

    • Soak casings in luke warm water for 30 minutes
    • Have ice water ready or crushed ice

    Cut Meat

    Cut all the meat and fat in to 2 - 3cm cubes.

    Mix Ingredients

    Add all the spices and water to the meat, mix well by hand and place the meat in to the fridge for 1 hour

    Grind the meat

    Grind the mix through the 5mm plate of the mincer

    Mixing

    Mix everything for about 5 minutes till the material becomes very sticky

    Filling

    Fill the sausage mix in to the casing and twist to 125 to 130gr per sausage. Make sure you do not have any air in the sausages. Should there be air use a sausage pricker to let the air out.
    Fill the sausages firm.

    Hanging

    Hand the sausages for about 15 minutes or put them on a place where the excess water can drip off.

    Storage

    Vacuum seal or put the sausages in a freezer bag and freeze them.
    In the fridge they will hold a few days. Maximum 2-3 days
